ASH’S DINER x FORMAJE

We hosted a brunch in Madrid with Clara, the founder of Formaje—an artisanal cheese shop that Maite describes as the 'Aesop of cheese’.

Frank and Mapi arrived early with flower arrangements in '50s Andalusian ceramic vases. We unwrapped all 30 individually-packaged hand-blown Garasu red-and-white dotted glasses and started setting the table—next to Formaje stone plates and ASH’S DINER’S mugs that read, “A breakfast so elaborate, it qualifies as lunch.”

Ashley made lemon ricotta pancakes with ingredients from the shop, Clara served a selection of cheese pairings, and Kust’s caramel chocolate sauce went over everything. Maurizio grounded Prolog beans and brewed drip coffee, while Alex took slow sips and photographed all this above. 

Loewe candles burned in the background, filling the space with hints of tomato leaf, honeysuckle, and oregano.

The brunch ran from late morning into late afternoon.
